Pistachio pralines

An excellent snack or small gift for friends and family. An original wrapper adds an extra touch. There is nothing better than a gift from the heart.

Ingredients:

•  3½ oz. white chocolate
•  3½ oz. mascarpone cheese
   (room temperature)
•  1½ oz. grounded pistachios
   + for topping
•  1 tbsp. lemon juice
•  grated lemon zest
•  1 tbsp. almond liqueur

Preparation

Roast the pistachios in a dry frying pan. Set aside to cool. Break the chocolate into smaller pieces, melt in a double boiler and set aside until it cools but is still liquid. Mash the mascarpone cheese with a spoon to make it softer. Add the chocolate and stir it in. Pour boiling water over lemons, grate the zest and squeeze out the juice. Add it to the mashed mascarpone cheese, add liqueur and stir. Put pistachios into the food processor and mix until the mixture looks like wet sand. Add to the mash and stir. Refrigerate for one hour.

Chop or run the rest of the pistachios through the food processor so that they are chunky. Take the mash out of the refrigerator. Using the tablespoon, form the mash into small balls (put a bit of oil on your hands to keep the mash from sticking). Roll it in the pistachios. Refrigerate for one hour. Wrap the pralines.
