Procedure
Wash the potatoes, cook in salty water until soft, then drain them. Clean the onion, finely dice.
In a saucepan, heat up the butter and sauté the diced bacon and onion in it. Sauté until golden brown. Mash the potatoes with their skins on, add the sautéed bacon and onion to them. Season with salt and pepper. From the potatoes prepared in this way, use a tablespoon to form gnocchi, then coat them in the fine breadcrumbs.
Then fry in hot lard for approximately 4 minutes.
Cooking techniques
- You may add nutmeg to the potato mixture.
- Do not fry the gnocchi on intense heat, they would crack.
- Do not over-fry the bacon; leave it soft.
- You may add roughly ground caraway seeds, garlic or marjoram into the potato mixture.
