Fresh marinated salmon on skin with coarse sea salt and sugar, grilled on olive oil

Serves 4 people

Fresh salmon 2 lbs.
Coarse sea salt 1 lb.
Caster sugar 1 lb.
Virgin olive oil ½ cup

Procedure
Remove the bones from the fresh salmon and dry it using a paper towel. Place the salmon prepared in this way on to a baking tray with the skin on the bottom. In a bowl, mix the salt, sugar and pour it all in an even layer on to the salmon.Leave it to marinate for 5 hours at room temperature.

After 5 hours, remove the salt and sugar marinade, rinse it off under cold running water and then dry using a paper towel.

Cut the marinated salmon into steaks and grill it. Heat up the grill pan, add the oil in which the salmon will be grilled. First with the skin on the bottom, approximately 4 minutes and then turn the salmon over and grill for another 4 minutes.

Cooking techniques
- The grilling temperature for salmon should not exceed 390°F, a suitable temperature is 356°F.
- Grill the salmon with the skin on, it is juicier and more delicious.
- It is easier to remove the skin after grilling than beforehand.
- You may grill the marinated salmon in one piece. You do not need to cut it into pieces. The salmon is even more juicy and delicious.
- You may bake the salmon wrapped in aluminum foil or baking paper.
